ok... this slide open tuning thing is all new to me ....in a standard E tuning if i was playing a simple 12 bar in the key of G i would use chords G,C and D... Does the same theory work in open G tuning?

Exactly, all blues works on the 1 (G), 4 (C), 5 (D) progression theory.
In open G you can just play the C all open at the 5th fret and the D all open at the 7th. There are plenty of nice variations on those chords but that will get you started.

Meaning, it doesn't matter what "tuning" you've adopted, it's the intervals between the chords and the specific way they're arranged that counts. As David says- I-IV-V or "G-C-D" in "G" (count those intervals!).
